Abstract

From yogurt to sourdough, soy sauce, beer, wine, and kombucha, fermented food and drinks are all around us. Many people are tuning into the benefits of probiotics (found in fermented food) for the health of our gut flora and are seeking an inexpensive alternative to probiotic supplements. Then there are the foodies who love the rich, earthy flavors of ferments like sauerkraut---one of the most popular and easy-to-make fermented foods. With a few basic tools and ingredients, you can help program participants make their own jar of kraut to ferment at home.
