Abstract
The purpose of this paper is to consider a practical curriculum development
project, in the field of hospitality studies, in the light of current
thinking on educational innovation. Definitions and theoretical models
of innovation in education are considered and are applied to the
research, development and evaluation process undertaken in initiating
the Irish National Craft Curricula and Certification Board's new
Hospitality Crafts Course. This craft education and training programme
for the hotel, catering and tourism industry adopts an approach to
skills development, teaching, learning and assessment which differs
significantly from that practised in existing craft training programmes
for the industry. It is a programme designed to meet the increasing
demand for multi-skilled, hospitality-orientated young people to
enter the industry in Ireland. The case study explores some of the
practical challenges which were faced in applying an innovatory programme
within the context of an established educational and training environment.
